March is National Nutrition Month--and One Dallas Business Takes the Bite out of Healthy Living Local Dallas resident, Ariana "Coco" Frey is more than willing to lead the charge when it comes to spreading the word about National Nutrition Month. Why? She personally experienced a debilitating disease at an early age and found the best and-only cure, was a change of diet and lifestyle. While we've all heard various stories about disease and a host of "new age" remedies, Coco's story is unusually compelling. At age 13, she was diagnosed with Chronic Fatigue Syndrome (CFS) and, at age 17, she was also found to have an unusually low "Natural Killer Cell" count. While the average healthy person maintains a count around 400, Coco's count only registered a mere 64. This translates into a seriously compromised immune system. The situation wasn't just serious; it was dire. Ms. Frey was left listless, endured splitting headaches, and went through life feeling chronically "burned out." But the good news is: thanks to a study of injections of adenosinetriphosphates, doses of supplements and acidophilus, and a drastic change in nutrition, Coco not only became well, she exudes energy that most of us would envy. "There's hardly any way to convey my feelings about the effects of proper nutrition. The changes I made literally saved my life and I know my experience can be used to benefit everyone" notes Frey. She is on a personal mission “to help improve the quality of life by reducing health epidemics and increasing wellness.” The changes she made are not only good for correcting a chronic disease--they're good for all of us. Coco discarded all white sugar and flour and dramatically upped her consumption of fruits and vegetables. Additionally, she excluded yeast, wheat, gluten, and vinegar from her diet. Then, removed additives and preservatives; leading to a natural and organic diet. And there's more: she also began practicing yoga. Finally, she is able to consume a variety of foods, all in moderation. Now, 30, Coco consumes fiber and carbohydrates from whole grains and minerals and vitamins from fruits and vegetables; protein sources are limited to a minimum of meat and plenty of fish and soy. She also consumes at least 64-ounces of water daily. The payoff - outstanding health and renewed vitality! It's a story Ms. Frey is delighted to share. In fact, she started a business, aptly named "Eat the Truth," www.eatthetruth.com that's dedicated to helping people change their lifestyles to become healthier and happier - by making proper food choices and engaging in healthful activities such as yoga. In addition to her business with individuals, Coco also educates health professionals and businesses regarding proper nutrition and is a dynamic presenter at a variety of events. The mission of Eat The Truth is “to provide nutrition education and expert advice to improve human existence, globally.” March 19 and 20, she'll be presenting at FoodCare for Healthcare, a workshop for hospital and retirement facility foodservice directors. Also, she offers “Cookin’ with Coco” a healthy cooking series at local kitchens, including Sur La Table and the Dallas Farmers Market. Coco volunteers her time and energy with American Diabetes Association and American Cancer Society and continues to work with non-profits, community organizations, and local businesses. Coco is not only a walking example of nutrition; she lives each day helping others to get there.
